Banana Walnut Muffins

Banana Walnut Muffins

Ingredients

  • 2 bananas, mashed
  • 2 eggs
  • 1/2 cup Greek yogurt, nonfat
  • 3 tbsp olive oil
  • 2 tbsp maple syrup
  • 2/3 cups whole wheat flour
  • 1/3 cups unbleached white flour
  • 1 tsp baking powder
  • 2/3 cups walnuts
  • 1/3 cup dark chocolate chunks

Instructions

  1. Preheat the oven to 350 F.
  2. Mix together all wet ingredients: bananas, eggs, yogurt, olive oil and maple syrup.
  3. In a separate bowl mix the flours and baking powder.
  4. Add the dry ingredients to the wet and mix just until all of the dry ingredients are moistened.
  5. Gently fold in the walnuts and chocolate chunks.
  6. Fill muffin tins (oiled or lined with unbleached paper wrappers) evenly.
  7. Bake for approximately 20 minutes.
