Banana Walnut Muffins

Ingredients
- 2 bananas, mashed
- 2 eggs
- 1/2 cup Greek yogurt, nonfat
- 3 tbsp olive oil
- 2 tbsp maple syrup
- 2/3 cups whole wheat flour
- 1/3 cups unbleached white flour
- 1 tsp baking powder
- 2/3 cups walnuts
- 1/3 cup dark chocolate chunks
Instructions
- Preheat the oven to 350 F.
- Mix together all wet ingredients: bananas, eggs, yogurt, olive oil and maple syrup.
- In a separate bowl mix the flours and baking powder.
- Add the dry ingredients to the wet and mix just until all of the dry ingredients are moistened.
- Gently fold in the walnuts and chocolate chunks.
- Fill muffin tins (oiled or lined with unbleached paper wrappers) evenly.
- Bake for approximately 20 minutes.
