Bang Bang Salmon with Roasted Green Beans & Mushrooms

Ingredients
Salmon
- 3 5-6 oz salmon fillets
- salt
- pepper
- 1 tbsp olive oil
Green Beans
- 12 oz green beans, trimmed
- 8 oz mushrooms, sliced
- 1 1/2 tbsp olive oil
- salt
Bang Bang Sauce
- 3 tbsp Greek yogurt, nonfat
- 1 1/2 tbsp hot sauce
- 1 tbsp honey
- 1 1/2 tsp rice vinegar
- pinch salt
Instructions
- Preheat oven to 425°F.
- On a sheet pan, toss green beans and mushrooms with olive oil, salt, pepper, and optional seasoning.
- Roast for 22–25 minutes, stirring once halfway, until tender and browned.
- Whisk all sauce ingredients in a small bowl until smooth. Taste and adjust heat, sweetness, or acidity to your preference.
- Pat salmon dry, season with salt and pepper.
- Heat a large skillet with olive oil over medium heat.
- Place salmon skin-side down and sear for ~4–5 minutes. Flip and cook another 2–3 minutes until just cooked through.
- Spoon bang bang sauce on top before serving.
