Bang Bang Salmon with Roasted Green Beans & Mushrooms

Bang Bang Salmon with Roasted Green Beans & Mushrooms

Ingredients

Salmon

  • 3 5-6 oz salmon fillets
  • salt
  • pepper
  • 1 tbsp olive oil

Green Beans

  • 12 oz green beans, trimmed
  • 8 oz mushrooms, sliced
  • 1 1/2 tbsp olive oil
  • salt

Bang Bang Sauce

  • 3 tbsp Greek yogurt, nonfat
  • 1 1/2 tbsp hot sauce
  • 1 tbsp honey
  • 1 1/2 tsp rice vinegar
  • pinch salt

Instructions

  1. Preheat oven to 425°F.
  2. On a sheet pan, toss green beans and mushrooms with olive oil, salt, pepper, and optional seasoning.
  3. Roast for 22–25 minutes, stirring once halfway, until tender and browned.
  4. Whisk all sauce ingredients in a small bowl until smooth. Taste and adjust heat, sweetness, or acidity to your preference.
  5. Pat salmon dry, season with salt and pepper.
  6. Heat a large skillet with olive oil over medium heat.
  7. Place salmon skin-side down and sear for ~4–5 minutes. Flip and cook another 2–3 minutes until just cooked through.
  8. Spoon bang bang sauce on top before serving.
