Brain-Healthy Sushi Bake



A brain-healthy twist on the viral sushi bake — warm, cozy salmon and rice topped with fresh avocado and served with crunchy nori “chips” for scooping.

Ingredients

Rice Base

  • 3 cups brown rice
  • 2 tbsp rice vinegar
  • 1/4 tsp salt
  • 1 tsp maple syrup

Seaweed Layer

  • 3 sheets nori, crumbled

Salmon Layer

  • 1 lb salmon fillets, cooked and flaked
  • 1/4 cup mayonnaise (avocado oil)
  • 1/4 cup Greek yogurt, nonfat
  • 1 tbsp olive oil
  • 2 tbsp tamari
  • 1 tsp rice vinegar
  • 2 cups spinach, chopped

Toppings

  • 2 avocado, sliced
  • 2 scallions, thinly sliced

For Serving

  • 2 cucumber, sliced
  • sprinkle Everything Bagel Seasoning

Sriracha Yogurt Drizzle

  • 1/4 cup Greek yogurt, nonfat
  • 2 tsp Sriracha
  • 1 tsp rice vinegar

Instructions

  1. Preheat oven to 375°F (190°C)
  2. In a bowl, mix cooked brown rice with rice vinegar, salt, and optional maple syrup. Spread evenly in a lightly oiled 9×13-inch baking dish.
  3. Sprinkle crumbled nori evenly over the rice layer.
  4. ​In a bowl, combine flaked salmon, Greek yogurt, olive oil, tamari, rice vinegar, and spinach. Gently mix until creamy but still chunky.
  5. ​Spread evenly over the seaweed layer.
  6. ​Bake uncovered for 18–22 minutes, until warmed through and lightly set.
  7. Remove from oven and let cool 5 minutes.
  8. ​Top with sliced avocado, scallions, and Everything Bagel Seasoning.
  9. Serve warm with sliced cucumber and Sriracha yogurt drizzle.
