Brain-Healthy Sushi Bake
A brain-healthy twist on the viral sushi bake — warm, cozy salmon and rice topped with fresh avocado and served with crunchy nori “chips” for scooping.

Ingredients
Rice Base
- 3 cups brown rice
- 2 tbsp rice vinegar
- 1/4 tsp salt
- 1 tsp maple syrup
Seaweed Layer
- 3 sheets nori, crumbled
Salmon Layer
- 1 lb salmon fillets, cooked and flaked
- 1/4 cup mayonnaise (avocado oil)
- 1/4 cup Greek yogurt, nonfat
- 1 tbsp olive oil
- 2 tbsp tamari
- 1 tsp rice vinegar
- 2 cups spinach, chopped
Toppings
- 2 avocado, sliced
- 2 scallions, thinly sliced
For Serving
- 2 cucumber, sliced
- sprinkle Everything Bagel Seasoning
Sriracha Yogurt Drizzle
- 1/4 cup Greek yogurt, nonfat
- 2 tsp Sriracha
- 1 tsp rice vinegar
Instructions
- Preheat oven to 375°F (190°C)
- In a bowl, mix cooked brown rice with rice vinegar, salt, and optional maple syrup. Spread evenly in a lightly oiled 9×13-inch baking dish.
- Sprinkle crumbled nori evenly over the rice layer.
- In a bowl, combine flaked salmon, Greek yogurt, olive oil, tamari, rice vinegar, and spinach. Gently mix until creamy but still chunky.
- Spread evenly over the seaweed layer.
- Bake uncovered for 18–22 minutes, until warmed through and lightly set.
- Remove from oven and let cool 5 minutes.
- Top with sliced avocado, scallions, and Everything Bagel Seasoning.
- Serve warm with sliced cucumber and Sriracha yogurt drizzle.
