Bright & Bold Citrus Greens Salad

Bright & Bold Citrus Greens Salad

Ingredients

  • 4 cups leafy greens, mixed
  • 2 medium oranges, sliced into thin rounds
  • 1 pink grapefruit, sliced into thin rounds
  • 1/4 cup quick pickled red onions
  • 1/4 cup walnuts, toasted
  • 1/2 tbsp hemp seeds
  • 7 oz tofu, pre-baked

For the dressing

  • 2 tbsp tahini
  • 1 1/2 tbsp orange juice, fresh
  • 1 tbsp lemon juice
  • 1 tsp maple syrup
  • 1 tbsp olive oil
  • 2 tbsp water, or more to thin
  • salt, to taste
  • pepper, to taste

Instructions

  1. In a bowl or jar, whisk together tahini (or peanut butter), orange juice, lemon juice, maple syrup, olive oil, salt, and black pepper.
  2. Add water 1 tbsp at a time until the dressing reaches a pourable, creamy consistency.
  3. Toss the greens with a little dressing to lightly coat.
  4. Divide between 2-3 bowls or plates.
  5. Arrange citrus slices, pickled onions, and baked tofu over the greens.
  6. Sprinkle with toasted walnuts/almonds, chia/hemp seeds.
  7. Drizzle with remaining dressing before serving.
  8. Garnish with extra nuts or fresh herbs (optional).
