Bright & Bold Citrus Greens Salad
This Bright & Bold Citrus Greens Salad is a refreshing, vibrant, and protein-packed meal that’s both nourishing and easy to prepare. The combination of fresh greens, juicy citrus, baked tofu, and a nutty dressing creates an irresistible blend of textures and flavors. Rich in plant-based protein, healthy fats, antioxidants, and fiber, this salad is perfect for a quick weeknight dinner or a satisfying lunch.

Ingredients
- 4 cups leafy greens, mixed
- 2 medium oranges, sliced into thin rounds
- 1 pink grapefruit, sliced into thin rounds
- 1/4 cup quick pickled red onions
- 1/4 cup walnuts, toasted
- 1/2 tbsp hemp seeds
- 7 oz tofu, pre-baked
For the dressing
- 2 tbsp tahini
- 1 1/2 tbsp orange juice, fresh
- 1 tbsp lemon juice
- 1 tsp maple syrup
- 1 tbsp olive oil
- 2 tbsp water, or more to thin
- salt, to taste
- pepper, to taste
Instructions
- In a bowl or jar, whisk together tahini (or peanut butter), orange juice, lemon juice, maple syrup, olive oil, salt, and black pepper.
- Add water 1 tbsp at a time until the dressing reaches a pourable, creamy consistency.
- Toss the greens with a little dressing to lightly coat.
- Divide between 2-3 bowls or plates.
- Arrange citrus slices, pickled onions, and baked tofu over the greens.
- Sprinkle with toasted walnuts/almonds, chia/hemp seeds.
- Drizzle with remaining dressing before serving.
- Garnish with extra nuts or fresh herbs (optional).
