Caprese White Bean Salad Bowl

Ingredients

  • 3 large tomato
  • 6 oz mozzarella, reduced fat, fresh, sliced into medallions
  • 1 1/2 cups cooked white beans
  • 3 tbsp olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 1 clove garlic, minced
  • 3/4 tsp Dijon mustard, optional
  • basil, fresh
  • pepper
  • salt
  • 3 slices whole grain bread, toasted

Instructions

  1. Make dressing: Whisk olive oil, balsamic, garlic, Dijon, salt, and pepper.
  2. Assemble: Arrange tomato and mozzarella slices in a wide shallow bowl or platter. Add basil.
  3. Add beans: Toss beans in 1 Tbsp dressing, then scatter over the salad.
  4. Finish: Drizzle with remaining dressing, grind black pepper on top.
  5. Serve with bread: 1 slice per person for dipping into the tomato juices.
