Ingredients

  • 1 cup Medjool dates, pitted and softened if needed
  • 1/2 cup walnuts
  • 2 tbsp cocoa powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cardamom
  • 1/8 tsp ground nutmeg
  • 2 tbsp cocoa nibs
  • 1/2 tsp vanilla extract
  • pinch salt

Optional coating

  • cocoa powder, mixed with a dash of cinnamon for rolling
  • walnuts, finely ground for texture

Instructions

  1. Prep nuts: Pulse walnuts or almonds in a food processor until finely ground.
  2. Blend: Add dates, cocoa powder, spices, vanilla (if using), and salt. Process until the mixture forms a sticky dough. If the mixture is dry, add 1/2-1 1/2 tablespoons of water until it comes together like a dough ball.
  3. Add crunch: Pulse in cacao nibs briefly, so you retain some texture.
  4. Form truffles: Roll into 1-inch balls.
  5. Coat (optional): Roll in cocoa-cinnamon mixture or ground nuts for extra flavor.
  6. Chill: Refrigerate for 15–20 minutes to set (optional, but improves texture).
  7. Roll in cocoa powder mixed with a dash of cinnamon or finely ground nuts for texture
