Ingredients
- 1 cup Medjool dates, pitted and softened if needed
- 1/2 cup walnuts
- 2 tbsp cocoa powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground cardamom
- 1/8 tsp ground nutmeg
- 2 tbsp cocoa nibs
- 1/2 tsp vanilla extract
- pinch salt
Optional coating
- cocoa powder, mixed with a dash of cinnamon for rolling
- walnuts, finely ground for texture
Instructions
- Prep nuts: Pulse walnuts or almonds in a food processor until finely ground.
- Blend: Add dates, cocoa powder, spices, vanilla (if using), and salt. Process until the mixture forms a sticky dough. If the mixture is dry, add 1/2-1 1/2 tablespoons of water until it comes together like a dough ball.
- Add crunch: Pulse in cacao nibs briefly, so you retain some texture.
- Form truffles: Roll into 1-inch balls.
- Coat (optional): Roll in cocoa-cinnamon mixture or ground nuts for extra flavor.
- Chill: Refrigerate for 15–20 minutes to set (optional, but improves texture).
