Cherry Rhubarb Chia Jam Yogurt Parfaits

Ingredients

Chia Jam

  • 1 cup rhubarb, chopped
  • 1 cup cherries, pitted, fresh or frozen
  • 2 tsp maple syrup
  • 1 tbsp chia seeds
  • 1/2 tsp vanilla extract

  • 1 1/4 cups Greek yogurt, nonfat
  • 2 tbsp walnuts
  • sprinkle ground cinnamon

Instructions

  1. In a small saucepan, combine rhubarb, cherries, and maple syrup.
  2. Simmer over medium heat for ~10–12 minutes, stirring occasionally, until fruit is soft and saucy.
  3. Mash slightly with a fork or potato masher (keep some texture).
  4. Stir in chia seeds and vanilla, if using.
  5. Let sit for 10–15 minutes to thicken. Cool completely.
  6. Make parfaits: Layer ¼ cup yogurt
  7. Spoon over 2 tbsp chia jam
  8. Add a sprinkle of nuts or flax
  9. Repeat layers two more times.
  10. Finish with more jam + nuts on top
