Cherry Rhubarb Chia Jam Yogurt Parfaits

Ingredients
Chia Jam
- 1 cup rhubarb, chopped
- 1 cup cherries, pitted, fresh or frozen
- 2 tsp maple syrup
- 1 tbsp chia seeds
- 1/2 tsp vanilla extract
- 1 1/4 cups Greek yogurt, nonfat
- 2 tbsp walnuts
- sprinkle ground cinnamon
Instructions
- In a small saucepan, combine rhubarb, cherries, and maple syrup.
- Simmer over medium heat for ~10–12 minutes, stirring occasionally, until fruit is soft and saucy.
- Mash slightly with a fork or potato masher (keep some texture).
- Stir in chia seeds and vanilla, if using.
- Let sit for 10–15 minutes to thicken. Cool completely.
- Make parfaits: Layer ¼ cup yogurt
- Spoon over 2 tbsp chia jam
- Add a sprinkle of nuts or flax
- Repeat layers two more times.
- Finish with more jam + nuts on top
