Chicken and Dumplings
There’s nothing quite as cozy and heartwarming as a bowl of chicken and dumplings—but this version leans into the MIND diet ethos: nourishing vegetables, lean chicken, whole grains, and a light but flavorful broth. With just a handful of simple ingredients and a modest amount of time, you’ll have a comforting, brain-friendly meal that feels like home.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 ribs celery, sliced
- 2 large carrots, diced
- 2 small potatoes, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 6 cup chicken broth, low sodium
- 1 lb chicken thighs, boneless skinless
- 1 cup broccoli, cut small
- 1/2 cup peas
- 2 tbsp parsley
- salt
- pepper
Dumplings
- 1 cup white whole wheat flour
- 1/2 cup oat flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tbsp olive oil
- 1/2 cup Greek yogurt, nonfat
- 1/4 cup soy milk
Instructions
- Sauté onion, celery, carrots and potatoes in olive oil 6–7 min.
- Add garlic and herbs and cook 1 minute longer.
- Add broth and chicken; simmer 20 min.
- Shred chicken; return.
- Add broccoli and peas; simmer 5 min.
- For the dumplings, mix dry ingredients.
- Then stir in olive oil, yogurt, milk to a sticky dough.
- Drop spoonfuls onto simmering stew. Cover and steam 12–15 min.
- Finish with parsley and serve.
