Chicken and Dumplings



There’s nothing quite as cozy and heartwarming as a bowl of chicken and dumplings—but this version leans into the MIND diet ethos: nourishing vegetables, lean chicken, whole grains, and a light but flavorful broth. With just a handful of simple ingredients and a modest amount of time, you’ll have a comforting, brain-friendly meal that feels like home.

Chicken and Dumplings

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 ribs celery, sliced
  • 2 large carrots, diced
  • 2 small potatoes, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 6 cup chicken broth, low sodium
  • 1 lb chicken thighs, boneless skinless
  • 1 cup broccoli, cut small
  • 1/2 cup peas
  • 2 tbsp parsley
  • salt
  • pepper

Dumplings

  • 1 cup white whole wheat flour
  • 1/2 cup oat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1/2 cup Greek yogurt, nonfat
  • 1/4 cup soy milk

Instructions

  1. Sauté onion, celery, carrots and potatoes in olive oil 6–7 min.
  2. Add garlic and herbs and cook 1 minute longer.
  3. Add broth and chicken; simmer 20 min.
  4. Shred chicken; return.
  5. Add broccoli and peas; simmer 5 min.
  6. For the dumplings, mix dry ingredients.
  7. Then stir in olive oil, yogurt, milk to a sticky dough.
  8. Drop spoonfuls onto simmering stew. Cover and steam 12–15 min.
  9. Finish with parsley and serve.
