Chicken, Quinoa and Kale Soup
This Chicken, Quinoa & Kale Soup is a cozy bowl of comfort reminiscent of classic chicken noodle soup—but with a brain-healthy twist. Featuring pre-cooked chicken, fluffy quinoa, hearty veggies, and vibrant kale, it's the perfect meal for chilly nights or when a family member is under the weather.

Ingredients
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/2 tsp ground turmeric
- 1 tbsp miso paste, optional
- 1 tbsp lemon juice
- 4 cups cooked chicken, shredded into small pieces
- 1 cup quinoa, cooked
- 8 cups chicken broth
- 1 bay leaf
- 1/2 tsp dried thyme
- 6 cups kale, destemmed and finely chopped
- 2 tbsp hemp seeds
- parsley, chopped
- lemon zest
Instructions
- Heat olive oil over medium heat.
- Sauté onion, carrots, and celery until softened and golden (10-12 minutes).
- Stir in garlic, ginger and turmeric; cook until fragrant (2-3 minutes).
- Add 1 cup of water, cover with a lid and let the vegetables steam for 15 minutes.
- Stir in miso paste until dissolved.
- Add broth, bay leaf and thyme.
- Add the kale.
- Bring to a boil and simmer for 15 minutes.
- Add chicken and cooked quinoa; simmer for 5 more minutes.
- Stir in the lemon juice.
- Top each bowl with hemp seeds, fresh parsley and lemon zest.
