Chocolate Protein Granola with Peanut Butter
Packed with heart‑healthy whole grains, antioxidant‑rich cherries and cocoa, and protein‑dense peanut butter, this granola bowl offers a deliciously indulgent way to support your brain on the MIND diet.

Ingredients
- 2 cups rolled oats
- 1/2 cup walnuts, chopped
- 1/2 cup sunflower seeds
- 2 tbsp ground flaxseed
- 1 tbsp chia seeds
- 2 tbsp cocoa powder
- pinch salt
- 1/4 cup peanut butter, natural
- 2 tbsp maple syrup
- 1 tbsp olive oil
- 1 tsp vanilla extract
Instructions
- Preheat oven to 325°F.
- Mix dry ingredients in one bowl.
- Warm wet ingredients slightly and mix until smooth, then stir into dry ingredients.
- Spread onto parchment-lined baking sheet.
- Bake 25–30 minutes, stirring halfway. Let cool before storing.
Serving Suggestions
- Serve with soy milk or nonfat Greek yogurt (1/2 cup has about 10 g protein) and fresh cherries or berries.
