Chocolate Pudding Overnight Oats

Ingredients

Chocolate Mousse Layer (High-Protein)

  • 14 oz silken tofu
  • 3 tbsp cocoa powder
  • 3 tbsp peanut butter powder
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Vanilla Oat Cream Layer

  • 1 1/2 cup rolled oats
  • 2 1/2 cup soy milk
  • 3 tbsp chia seeds
  • 3 tbsp hemp seeds
  • 1 banana
  • 1 tsp vanilla extract
  • 1/4 tsp salt

For Serving

  • 1 1/2 cup raspberries

Instructions

  1. Add all chocolate mousse ingredients to a large bowl and blend with an immersion blender until completely smooth and fluffy.
  2. In a separate large bowl, add all oat cream ingredients and blend with an immersion blender until very smooth and creamy.
  3. Let the oat cream sit for 5–10 minutes to thicken slightly.
  4. Divide the oat cream evenly among 5 jars.
  5. Top with the chocolate mousse.
  6. Cover and refrigerate for at least 4 hours, or overnight.
  7. Serve topped with fresh berries.
