Chocolate Pudding Overnight Oats
Rich, chocolatey, and surprisingly nourishing, these pudding-style overnight oats feel like dessert for breakfast. Made with a creamy high-protein base and layered with a smooth oat blend, they’re easy to prep ahead and perfect for busy mornings.

Ingredients
Chocolate Mousse Layer (High-Protein)
- 14 oz silken tofu
- 3 tbsp cocoa powder
- 3 tbsp peanut butter powder
- 3 tbsp honey
- 1 tsp vanilla extract
- 1/4 tsp salt
Vanilla Oat Cream Layer
- 1 1/2 cup rolled oats
- 2 1/2 cup soy milk
- 3 tbsp chia seeds
- 3 tbsp hemp seeds
- 1 banana
- 1 tsp vanilla extract
- 1/4 tsp salt
For Serving
- 1 1/2 cup raspberries
Instructions
- Add all chocolate mousse ingredients to a large bowl and blend with an immersion blender until completely smooth and fluffy.
- In a separate large bowl, add all oat cream ingredients and blend with an immersion blender until very smooth and creamy.
- Let the oat cream sit for 5–10 minutes to thicken slightly.
- Divide the oat cream evenly among 5 jars.
- Top with the chocolate mousse.
- Cover and refrigerate for at least 4 hours, or overnight.
- Serve topped with fresh berries.
