Cilantro Lime Rice
This cilantro-lime rice is a flavorful, brain-healthy twist on a takeout favorite—made with whole-grain brown rice, heart-healthy olive oil, and a burst of citrusy freshness that pairs perfectly with tacos, salmon, or veggie bowls.
Ingredients
- 1 cup brown rice, uncooked
- 2 cups vegetable broth
- lime juice, from one lime
- lime zest, from one lime
- 1/2 cup cilantro, chopped
- 1/4 tsp salt, optional
Instructions
- In a pot, bring water or broth and rice to a boil. Reduce heat to low, cover, and simmer until water is absorbed and rice is tender (about 40 minutes, but check the package instructions).
- Turn off heat and let sit covered for 5 minutes.
- Fluff with a fork and stir in lime zest, juice, and chopped cilantro.
