Cilantro Lime Rice



This cilantro-lime rice is a flavorful, brain-healthy twist on a takeout favorite—made with whole-grain brown rice, heart-healthy olive oil, and a burst of citrusy freshness that pairs perfectly with tacos, salmon, or veggie bowls.

Cilantro Lime Rice

Ingredients

  • 1 cup brown rice, uncooked
  • 2 cups vegetable broth
  • lime juice, from one lime
  • lime zest, from one lime
  • 1/2 cup cilantro, chopped
  • 1/4 tsp salt, optional

Instructions

  1. In a pot, bring water or broth and rice to a boil. Reduce heat to low, cover, and simmer until water is absorbed and rice is tender (about 40 minutes, but check the package instructions).
  2. Turn off heat and let sit covered for 5 minutes.
  3. Fluff with a fork and stir in lime zest, juice, and chopped cilantro.
