Crispy Seasoned Oven Fries (MIND Diet-Friendly)

Ingredients

  • 4 large potatoes, scrubbed, skin on
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • pinch cayenne

Instructions

  1. Preheat oven to 400°F. Line 2 baking sheets with parchment paper.
  2. Cut potatoes into even fries—about ¼-inch thick sticks. Try to keep them uniform for even baking.
  3. Optional soaking step (recommended): Place cut fries in a bowl of cold water for 30 minutes to remove excess starch. This step helps them crisp up nicely. Then drain and pat completely dry with a clean towel.
  4. Season: In a large bowl, toss the fries with olive oil, salt, paprika, garlic powder, onion powder, pepper, oregano, and cayenne (if using). Mix well to coat evenly.
  5. Arrange: Spread the fries in a single layer on the baking sheet—don’t crowd them or they’ll steam instead of crisp. Use two sheets if needed.
  6. Bake: Roast for 20 minutes, flip each fry with tongs or a spatula, and roast another 15–20 minutes, until golden brown and crispy.
