Crispy Seasoned Oven Fries (MIND Diet-Friendly)

These MIND diet-friendly oven fries are the perfect side: lightly seasoned, irresistibly crisp, and made with heart-healthy olive oil and brain-boosting herbs. With just a few pantry staples and your trusty oven, you can enjoy fries that feel indulgent but are loaded with flavor. Pair them with a veggie burger, grilled salmon, or enjoy them straight from the pan.

Ingredients
- 4 large potatoes, scrubbed, skin on
- 3 tbsp olive oil
- 1/2 tsp salt
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- pinch cayenne
Instructions
- Preheat oven to 400°F. Line 2 baking sheets with parchment paper.
- Cut potatoes into even fries—about ¼-inch thick sticks. Try to keep them uniform for even baking.
- Optional soaking step (recommended): Place cut fries in a bowl of cold water for 30 minutes to remove excess starch. This step helps them crisp up nicely. Then drain and pat completely dry with a clean towel.
- Season: In a large bowl, toss the fries with olive oil, salt, paprika, garlic powder, onion powder, pepper, oregano, and cayenne (if using). Mix well to coat evenly.
- Arrange: Spread the fries in a single layer on the baking sheet—don’t crowd them or they’ll steam instead of crisp. Use two sheets if needed.
- Bake: Roast for 20 minutes, flip each fry with tongs or a spatula, and roast another 15–20 minutes, until golden brown and crispy.
