Cucumber-Tomato Pico de Gallo

Ingredients
- 3/4 cup tomato, diced
- 3/4 cup cucumber, diced
- 2 tbsp onion, finely chopped
- 2 tbsp cilantro, chopped
- 1 jalapeno, minced
- lime juice, from 1/2 a lime
- 1 tsp olive oil
- salt
Instructions
- Combine diced cucumber, tomatoes, onion, jalapeno and cilantro in a bowl.
- Add lime juice, olive oil (if using), salt, and any extras (garlic, hot sauce).
- Toss gently and let sit 5–10 minutes before serving
