Cucumber-Tomato Pico de Gallo

Cucumber-Tomato Pico de Gallo

Ingredients

  • 3/4 cup tomato, diced
  • 3/4 cup cucumber, diced
  • 2 tbsp onion, finely chopped
  • 2 tbsp cilantro, chopped
  • 1 jalapeno, minced
  • lime juice, from 1/2 a lime
  • 1 tsp olive oil
  • salt

Instructions

  1. Combine diced cucumber, tomatoes, onion, jalapeno and cilantro in a bowl.
  2. Add lime juice, olive oil (if using), salt, and any extras (garlic, hot sauce).
  3. Toss gently and let sit 5–10 minutes before serving
