Dijon-Herb Potato Salad with Cucumber & Dill

Ingredients
- 2 lbs small potatoes, boiled and cooled slightly
- 1/2 cup cucumber, diced
- 2 tbsp dill, chopped
- 2 tbsp red onion, chopped
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 tbsp red wine vinegar
- salt
- pepper
- hard boiled egg, optional
- spoonful Greek yogurt, nonfat, optional, for creaminess
Instructions
- Cut warm (but not hot) potatoes into bite-size chunks.
- Whisk dressing: olive oil, mustard, vinegar/lemon, salt, pepper.
- Toss potatoes with cucumber, onion, dill, and dressing.
- Chill or serve slightly warm.
- Optionally add hard boiled egg or a spoonful of yogurt for creaminess.
Serving Suggestions
- Create a Nicoise inspired plate with: sliced hard boiled egg, sliced tomato, steamed green beans, olives, cooked salmon seasoned with olive oil, lemon zest, and dill OR Dijon + paprika glaze. Optionally served over a bed of spinach or other greens.
