Easy Turkey and Bean Chili



A thick, restaurant-quality chili that's actually simple to make. Ground turkey, plenty of beans, fire-roasted tomatoes, and a hit of heat from jalapeños create a deeply satisfying bowl. We stir in fresh greens at the end for an extra brain-healthy boost. Top with nonfat Greek yogurt and rainbow pico de gallo for a burst of color and extra polyphenols that make every bite pop.

Easy Turkey and Bean Chili

Ingredients

  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 jalapeno, minced
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 4 cups tomato, diced
  • 1 1/2 cups cooked pinto beans, drained and rinsed well
  • 1 1/2 cups cooked kidney beans, drained and rinsed well
  • 1 cup water
  • 1 tsp salt
  • pinch pepper
  • 3 cups spinach, chopped

Vibrant Rainbow Pico

  • 2 cups tomato, diced
  • 1/2 cup bell peppers, yellow, diced
  • 1/4 cup onion, diced
  • pinch salt

Vibrant Pico

  • 1 lime, juiced

Instructions

  1. Mix together the Vibrant Rainbow Pico ingredients. Set aside.
  2. Brown the turkey in olive oil. Push aside.
  3. ​Sauté onion, pepper, garlic, and jalapeño until soft (5 min).
  4. ​Add spices, stir for 1 minute.
  5. Dump in tomatoes, beans, water and salt.
  6. Simmer 30 minutes uncovered until thickened.
  7. Stir in greens the last 5 minutes. Season with salt & pepper.
  8. Top with the Vibrant Rainbow Pico.
