Easy Turkey and Bean Chili
A thick, restaurant-quality chili that's actually simple to make. Ground turkey, plenty of beans, fire-roasted tomatoes, and a hit of heat from jalapeños create a deeply satisfying bowl. We stir in fresh greens at the end for an extra brain-healthy boost. Top with nonfat Greek yogurt and rainbow pico de gallo for a burst of color and extra polyphenols that make every bite pop.

Ingredients
- 2 tbsp olive oil
- 1 lb ground turkey
- 1 onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 jalapeno, minced
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 4 cups tomato, diced
- 1 1/2 cups cooked pinto beans, drained and rinsed well
- 1 1/2 cups cooked kidney beans, drained and rinsed well
- 1 cup water
- 1 tsp salt
- pinch pepper
- 3 cups spinach, chopped
Vibrant Rainbow Pico
- 2 cups tomato, diced
- 1/2 cup bell peppers, yellow, diced
- 1/4 cup onion, diced
- pinch salt
Vibrant Pico
- 1 lime, juiced
Instructions
- Mix together the Vibrant Rainbow Pico ingredients. Set aside.
- Brown the turkey in olive oil. Push aside.
- Sauté onion, pepper, garlic, and jalapeño until soft (5 min).
- Add spices, stir for 1 minute.
- Dump in tomatoes, beans, water and salt.
- Simmer 30 minutes uncovered until thickened.
- Stir in greens the last 5 minutes. Season with salt & pepper.
- Top with the Vibrant Rainbow Pico.
