Hearty Tabbouleh Salad



Bursting with bright Mediterranean flavors and supercharged with brain-healthy greens, this Hearty Tabbouleh Salad blends hearty whole grains (bulgur) with fresh parsley, mint and juicy tomatoes — all tossed in a vibrant lemon-olive oil dressing.

Hearty Tabbouleh Salad

Ingredients

  • 1/2 cup bulgur
  • 2 cups parsley, leaves, chopped
  • 1 cup spinach, chopped
  • 2 tomato, finely chopped
  • 3 green onion, thinly sliced
  • 1 tbsp mint, fresh, chopped
  • 1 cup cooked chickpeas
  • lemon juice, from 2 lemons
  • 2 tbsp olive oil
  • salt, to taste
  • pepper, to taste
  • 2 tbsp walnuts, toasted and chopped, optional

Instructions

  1. Book the bulgur according to the package instructions. Fluff with a fork.
  2. While the bulgur cooks, finely chop parsley, salad greens, tomatoes, and green onions.
  3. In a large bowl, mix soaked bulgur, chopped herbs and greens, tomatoes, and chickpeas.
  4. Add lemon juice, olive oil, salt, and pepper. Toss thoroughly.
  5. Rest (Optional): Let sit 10 minutes for flavors to meld. Taste and adjust lemon, salt, or oil as needed.
