Hearty Tabbouleh Salad
Bursting with bright Mediterranean flavors and supercharged with brain-healthy greens, this Hearty Tabbouleh Salad blends hearty whole grains (bulgur) with fresh parsley, mint and juicy tomatoes — all tossed in a vibrant lemon-olive oil dressing.
Ingredients
- 1/2 cup bulgur
- 2 cups parsley, leaves, chopped
- 1 cup spinach, chopped
- 2 tomato, finely chopped
- 3 green onion, thinly sliced
- 1 tbsp mint, fresh, chopped
- 1 cup cooked chickpeas
- lemon juice, from 2 lemons
- 2 tbsp olive oil
- salt, to taste
- pepper, to taste
- 2 tbsp walnuts, toasted and chopped, optional
Instructions
- Book the bulgur according to the package instructions. Fluff with a fork.
- While the bulgur cooks, finely chop parsley, salad greens, tomatoes, and green onions.
- In a large bowl, mix soaked bulgur, chopped herbs and greens, tomatoes, and chickpeas.
- Add lemon juice, olive oil, salt, and pepper. Toss thoroughly.
- Rest (Optional): Let sit 10 minutes for flavors to meld. Taste and adjust lemon, salt, or oil as needed.
Serving Suggestions
- Pita bread, whole wheat bread or whole grain crackers and hummus on the side
