Herbed Yogurt Cucumber Salad

Ingredients

  • 1 large cucumber, thinly sliced
  • 1/4 small red onion, thinly sliced
  • 2 tbsp parsley, chopped
  • 2 tbsp mint, fresh, chopped
  • 1 tbsp olive oil
  • lemon juice, from 1/2 lemon
  • salt, to taste
  • pepper, to taste
  • 1 cup Greek yogurt, nonfat

Instructions

  1. In a mixing bowl, combine cucumber, red onion, parsley, and mint.
  2. Add olive oil, lemon juice, salt, and pepper. Toss gently.
  3. Fold in Greek yogurt to coat evenly and chill if desired.
