Herbed Yogurt Cucumber Salad
This creamy cucumber-yogurt salad is the perfect cooling companion to warm spring dishes. Made with crisp cucumber, red onion, and a swirl of protein-rich Greek yogurt, it’s brightened with fresh mint, parsley, and lemon. Ingredients
- 1 large cucumber, thinly sliced
- 1/4 small red onion, thinly sliced
- 2 tbsp parsley, chopped
- 2 tbsp mint, fresh, chopped
- 1 tbsp olive oil
- lemon juice, from 1/2 lemon
- salt, to taste
- pepper, to taste
- 1 cup Greek yogurt, nonfat
Instructions
- In a mixing bowl, combine cucumber, red onion, parsley, and mint.
- Add olive oil, lemon juice, salt, and pepper. Toss gently.
- Fold in Greek yogurt to coat evenly and chill if desired.
