Hot and Sour Winter Radish Soup
This vibrant Hot and Sour Winter Radish Soup is a refreshing twist on a classic comfort food. Inspired by The Meatless Gourmet cookbook, this version incorporates grated winter radishes, such as beauty heart radish, which add a striking color and earthy flavor. Packed with ingredients like carrots, radishes, and tofu, this soup is a nourishing option for those seeking brain-healthy meals.
Ingredients
- 4 cups vegetable broth
- 1 onion, chopped
- 1 large carrots, grated
- 1 large beauty heart radish, grated
- 1 tbsp sherry
- 4 oz firm tofu, cut into 1/2 inch cubes
- 2 tbsp red wine vinegar
- 1 1/2 tbsp soy sauce or tamari
- 1/4 cup water
- 2 tbsp cornstarch
- 1 tsp sesame oil
- 1/2 tsp pepper
- 1/4 cup green onion
Instructions
- Combine broth, sherry, onion, carrot and radish in a medium to large pot. Cover and cook on medium-high heat until the mixture comes to a boil. Reduce heat to medium-low, and simmer, covered, for 5 minutes.
- Add the tofu, soy sauce or tamari, and red wine vinegar.
- Increase heat to medium-high and bring to a boil again. Then, uncover and cook 3 minutes. Combine water and cornstarch in a glass measuring cup. Stir well. Add to the pot. Cook and stir for 2 more minutes. The soup will thicken slightly, and the radish and carrot will give it a beautiful color.
- Remove from heat and add the sesame oil, pepper and optional green onions or chives.
