Mediterranean Tuna Pasta Salad with Feta

Ingredients

  • 3 cups pasta, whole wheat or chickpea
  • 2 cans wild-caught tuna, drained
  • 1 1/2 cups tomato, chopped
  • 3/4 cup cucumber, chopped
  • 1/3 cup red onion, finely diced
  • 1/4 cup olives, sliced
  • 3 cups spinach, fresh, roughly chopped
  • 1/4 cup feta, reduced-fat or fat-free

For the Dressing

  • 3 tbsp olive oil
  • 3 tbsp red wine vinegar
  • 1 1/2 tsp Dijon mustard
  • 1 1/2 tsp Italian seasoning
  • salt, to taste
  • pepper, to taste

Instructions

  1. In a large bowl, combine the cooked pasta, tuna, tomatoes, cucumber, red onion, olives, spinach, and feta.
  2. In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon, garlic, herbs, salt, and pepper until well blended.
  3. Pour dressing over the salad and toss gently to combine.
