Ingredients
- 3 cups pasta, whole wheat or chickpea
- 2 cans wild-caught tuna, drained
- 1 1/2 cups tomato, chopped
- 3/4 cup cucumber, chopped
- 1/3 cup red onion, finely diced
- 1/4 cup olives, sliced
- 3 cups spinach, fresh, roughly chopped
- 1/4 cup feta, reduced-fat or fat-free
For the Dressing
- 3 tbsp olive oil
- 3 tbsp red wine vinegar
- 1 1/2 tsp Dijon mustard
- 1 1/2 tsp Italian seasoning
- salt, to taste
- pepper, to taste
Instructions
