Italian Tuna & White Bean Salad

Ingredients
- 2 cans wild-caught tuna
- 1 1/2 cups cooked white beans, low-sodium, drained and rinsed
- 1/4 cup red onion, finely diced
- 1 stalk celery, finely diced
- 1/2 cup tomato, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup olives, chopped
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- 1/2 tsp dried oregano
- 1/2 tsp garlic powder
- 1/4 tsp pepper
- 12 slices whole grain bread
Instructions
- In a large bowl combine tuna and white beans. Break the tuna into large flakes with a fork.
- Add red onion, celery, tomato, parsley and olives.
- Drizzle with extra virgin olive oil and red wine vinegar.
- Sprinkle in oregano, garlic powder and black pepper.
- Gently toss everything together until evenly coated.
- Taste and adjust seasoning with additional salt, pepper, or vinegar if needed.
- Let the salad sit 5–10 minutes so the flavors blend.
- Serve with good whole-grain bread, toast, or over greens.
