Loaded Hummus Sandwich

Ingredients
Purple Cabbage Slaw
- 3 cups purple cabbage, very thinly sliced or shredded
- 1/2 cup red onion, thinly sliced
- 3 tbsp rice vinegar
- 1 tbsp honey
- 1/4 tsp salt, or to taste
Sandwiches
- 6 slices whole grain bread
- 1 10-12 oz container hummus
- 1 tomato, thinly sliced
- 1 avocado, sliced
- 1 cup spinach
Instructions
- Add the thinly sliced purple cabbage and red onions to a medium-sized bowl.
- In a small bowl, whisk together rice vinegar, honey and salt.
- Pour dressing over the cabbage mixture and toss well to combine.
- Refrigerate at least 30 minutes.
- Toast two slices of whole grain bread.
- Spread hummus generously on each slice of toast.
- Layer spinach, tomato, avocado and slaw on half of the slices. Top with the remaining bread, press gently and serve.
