Meal Prep: Cooked Black Beans

Ingredients
- 2 1/2 cups black beans, dried
- 7 cups water, enough to fully cover beans, preventing burning
- 2 cloves garlic, Peeled
- 1 bay leaf, optional
- 1 tsp salt, Added after cooking
Instructions
- Measure the black beans 1 cup at a time and put them on a large plate. Make sure there are no pebbles, debris or broken beans.
- Rinse dried black beans thoroughly under cold water.
- Pour beans into the Instant Pot.
- Add 7 cups of water, garlic cloves, and bay leaf (if using).
- Seal the lid and set the Instant Pot to Manual/High Pressure for 30 minutes.
- Allow a Natural Release for 15 minutes, then carefully release any remaining pressure.
- Stir in 1 teaspoon salt and let the beans sit for 5 minutes to absorb flavor.
- Drain any excess liquid (or save it for soups and stews).
- Store in an airtight container for up to 5 days in the fridge or 3 months in the freezer.
