Ingredients
- 6 cups cabbage, finely chopped or shredded
- 2 tbsp red onion, finely chopped
- 2 tbsp olive oil
- 2 tsp Dijon mustard
- 1/2 tsp celery seed
- 1 cup carrots, grated
- 1/4 cup Greek yogurt, nonfat
- 1 tbsp apple cider vinegar
- 1/2 tsp honey
Instructions
- In a large bowl, combine the shredded or finely chop cabbage, carrots, and red onion or scallions.
- In a separate small bowl, whisk together the Greek yogurt, olive oil, vinegar or lemon juice, mustard, and honey if using.
- Pour the dressing over the vegetables and toss until everything is well coated.
- Season with salt, pepper, and celery seed if using.
- Cover and refrigerate for at least 1 hour before serving to let the flavors meld.
