MIND Diet-Friendly Restaurant Coleslaw

Ingredients

  • 6 cups cabbage, finely chopped or shredded
  • 2 tbsp red onion, finely chopped
  • 2 tbsp olive oil
  • 2 tsp Dijon mustard
  • 1/2 tsp celery seed
  • 1 cup carrots, grated
  • 1/4 cup Greek yogurt, nonfat
  • 1 tbsp apple cider vinegar
  • 1/2 tsp honey

Instructions

  1. In a large bowl, combine the shredded or finely chop cabbage, carrots, and red onion or scallions.
  2. In a separate small bowl, whisk together the Greek yogurt, olive oil, vinegar or lemon juice, mustard, and honey if using.
  3. Pour the dressing over the vegetables and toss until everything is well coated.
  4. Season with salt, pepper, and celery seed if using.
  5. Cover and refrigerate for at least 1 hour before serving to let the flavors meld.
