MIND Diet-Friendly Turkey and Wild Rice Soup

Ingredients

  • 1/2 cup wild rice
  • 2 cups turkey breast
  • 4 cups chicken broth
  • 2 cups water
  • 1 carrots, diced
  • 2 stalks celery, diced
  • 1 small onion, diced
  • 2 cups kale, chopped
  • 2 cups mushrooms, sliced
  • 1/2 tsp dried thyme
  • pepper, to taste
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • salt, to taste
  • parsley, optional, for garnish

Instructions

  1. Cook the wild rice: In a separate pot, cook the wild rice according to package instructions (typically 30-40 minutes). Set aside.
  2. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, celery, mushrooms kale and garlic. Sauté for about 5-7 minutes, or until the vegetables begin to soften.
  3. Add 1/4 cup of water and cover with a lid. Simmer 10 minutes.
  4. Add the liquids: Add the chicken broth and water to the pot with the sautéed vegetables. Stir in the thyme, salt, and pepper. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes, or until the vegetables are tender.
  5. Combine the ingredients: Once the wild rice is cooked, add it to the pot along with the shredded turkey.
  6. Serve: Adjust seasoning with more salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
