Ingredients
- 1/2 cup wild rice
- 2 cups turkey breast
- 4 cups chicken broth
- 2 cups water
- 1 carrots, diced
- 2 stalks celery, diced
- 1 small onion, diced
- 2 cups kale, chopped
- 2 cups mushrooms, sliced
- 1/2 tsp dried thyme
- pepper, to taste
- 2 cloves garlic, minced
- 1 tbsp olive oil
- salt, to taste
- parsley, optional, for garnish
Instructions
- Cook the wild rice: In a separate pot, cook the wild rice according to package instructions (typically 30-40 minutes). Set aside.
- Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, celery, mushrooms kale and garlic. Sauté for about 5-7 minutes, or until the vegetables begin to soften.
- Add 1/4 cup of water and cover with a lid. Simmer 10 minutes.
- Add the liquids: Add the chicken broth and water to the pot with the sautéed vegetables. Stir in the thyme, salt, and pepper. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes, or until the vegetables are tender.
- Combine the ingredients: Once the wild rice is cooked, add it to the pot along with the shredded turkey.
- Serve: Adjust seasoning with more salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
