MIND Diet-Friendly Whole Wheat Flax Tortillas
I love the convenience of store-bought tortillas, but I always feel a little uneasy about the long list of preservatives in them. Luckily, homemade tortillas are surprisingly easy to make—and totally worth it. With just a few simple ingredients, you get soft, pliable, and fresh tortillas without the additives. Plus, you can double or triple the batch and freeze them, so you always have a stash ready to go. This recipe uses a food processor to make the dough come together quickly, making the process even easier. Once you try these, you might never go back to store-bought

Ingredients
- 2 Cups whole wheat flour
- 4 Tbsp ground flaxseed
- 1 Tsp salt
- 2 Tbsp olive oil
- 1 Cup water, Warm
Instructions
- In a food processor, add the whole wheat flour, ground flaxseed, and salt.
- Pulse a few times to mix.
- Add olive oil and warm water gradually, mixing until a soft dough forms.
- Pulse about 10 times.
- Remove from the food processor and put in a bowl.
- Cover with a towel or plate and let rest for 15 minutes to allow the dough to hydrate.
- Divide into 6 pieces, roll into balls.
- Dust a large cutting board or other surface with flour (I recommend bread flour if you have it). Roll out each tortilla as thin as you can.
- Heat a griddle over medium-high heat and cook tortillas 1-2 minutes per side until brown spots appear.
