One-Pan Italian Salmon with Potatoes & Green Beans

Ingredients
- 1 lb potatoes, baby red
- 1 lb green beans, trimmed and chopped
- 3 salmon fillets
- 3 tbsp olive oil
- 2 tbsp Italian dressing seasoning
- salt
- pepper
Instructions
- Preheat oven to 400°F.
- Add potatoes and green beans to a 9x13" baking dish. Drizzle with 2–3 tbsp olive oil, sprinkle with about half the Italian dressing mix, toss to coat.
- Cover dish tightly with foil and bake 20 minutes.
- Remove dish from oven, nestle salmon fillets among the vegetables. Drizzle salmon with remaining olive oil and sprinkle with remaining Italian dressing mix. Season with salt and pepper if desired.
- Re-cover with foil and bake 15–20 minutes, until potatoes are fork-tender and salmon flakes easily with a fork (internal temp 145°F).
- For extra browning, uncover for the last 5 minutes of cooking.
- Serve hot, ideally with a fresh salad on the side.
