One-Pan Italian Salmon with Potatoes & Green Beans

One-Pan Italian Salmon with Potatoes & Green Beans

Ingredients

  • 1 lb potatoes, baby red
  • 1 lb green beans, trimmed and chopped
  • 3 salmon fillets
  • 3 tbsp olive oil
  • 2 tbsp Italian dressing seasoning
  • salt
  • pepper

Instructions

  1. Preheat oven to 400°F.
  2. Add potatoes and green beans to a 9x13" baking dish. Drizzle with 2–3 tbsp olive oil, sprinkle with about half the Italian dressing mix, toss to coat.
  3. Cover dish tightly with foil and bake 20 minutes.
  4. Remove dish from oven, nestle salmon fillets among the vegetables. Drizzle salmon with remaining olive oil and sprinkle with remaining Italian dressing mix. Season with salt and pepper if desired.
  5. Re-cover with foil and bake 15–20 minutes, until potatoes are fork-tender and salmon flakes easily with a fork (internal temp 145°F).
  6. For extra browning, uncover for the last 5 minutes of cooking.
  7. Serve hot, ideally with a fresh salad on the side.
