Potato Saag (Spinach & Potato Curry)
This comforting Potato Saag is a simple yet deeply satisfying Indian-inspired dish that brings together tender potatoes, vibrant spinach, and warming spices in one skillet. It's a budget-friendly, plant-based meal that feels both cozy and nourishing—perfect for a weeknight dinner or a make-ahead lunch. Paired with brown basmati rice and a side salad, it’s a flavorful way to pack in greens and fiber while sticking to a MIND diet-friendly approach.
Ingredients
- 6 cups spinach
- 1 tsp ginger, grated
- 1/4 tsp ground turmeric
- lemon juice, a squeeze
- 1 small onion, chopped
- 1 tsp ground cumin
- 1 tbsp olive oil
- 2 medium potatoes
- 1 clove garlic, minced
- 1/2 tsp ground coriander
- salt, to taste
Instructions
- Boil or steam potatoes until just tender (about 10–12 minutes), then drain.
- In a large skillet, sauté onion in olive oil until soft. Add garlic, ginger, and spices; cook for 1 minute.
- Add spinach and sauté until wilted (or warmed through, if using frozen).
- Stir in potatoes, season with salt, and cook for 2–3 more minutes, mashing a few potatoes into the spinach for a creamy texture. Add a little bit of water if needed to make it more saucy.
- Finish with lemon juice for brightness.
Serving Suggestions
- Serve with brown basmati rice and a side salad.
- Optionally add a scoop of nonfat Greek yogurt and a sprinkle of pumpkin seeds.
