Potato Saag (Spinach & Potato Curry)

Ingredients

  • 6 cups spinach
  • 1 tsp ginger, grated
  • 1/4 tsp ground turmeric
  • lemon juice, a squeeze
  • 1 small onion, chopped
  • 1 tsp ground cumin
  • 1 tbsp olive oil
  • 2 medium potatoes
  • 1 clove garlic, minced
  • 1/2 tsp ground coriander
  • salt, to taste

Instructions

  1. Boil or steam potatoes until just tender (about 10–12 minutes), then drain.
  2. In a large skillet, sauté onion in olive oil until soft. Add garlic, ginger, and spices; cook for 1 minute.
  3. Add spinach and sauté until wilted (or warmed through, if using frozen).
  4. Stir in potatoes, season with salt, and cook for 2–3 more minutes, mashing a few potatoes into the spinach for a creamy texture. Add a little bit of water if needed to make it more saucy.
  5. Finish with lemon juice for brightness.
