Quick Pickled Red Onions
These quick pickled red onions are great to make as part of meal prep. They are a delicious addition to salad and many other dishes.

Ingredients
- 1/2 cup apple cider vinegar
- 1/2 cup water, or more to cover the onions
- 1 tsp salt
- 1 tsp maple syrup
- 1 red onion, thinly sliced
Instructions
- In a jar or Pyrex container mix together the vinegar, water, salt and honey or maple syrup.
- Add the onions.
- Ideally let it sit in the frig, covered, overnight.
Eat well for the long run — and savor the season.
