Quinoa & Grilled Veggie Salad Jars

Ingredients

  • 1/2 cups quinoa, dried
  • 1 package baked tofu
  • 4 small zucchini, sliced into wedges
  • 1 bell peppers, sliced
  • 1/2 onion, sliced
  • 1 tbsp olive oil
  • salt, to taste
  • pepper, to taste
  • 1/4 cup feta, reduced-fat or fat-free

Dressing

  • 3 tbsp tahini
  • 3 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • 3 tbsp water

Instructions

  1. Cook the half-cup if dry quinoa according to package instructions.
  2. Slice the zucchini, bell pepper, and onion. Toss with olive oil, salt, and pepper, then grill or air-fry until tender and slightly charred.
  3. Cube the pre-baked tofu into bite-sized pieces. Optionally, throw in on the grill or air fryer for a few minutes.
  4. Mix the dressing.
  5. Assemble the jars: In each pint-sized mason jar, layer: Dressing (1 tbsp) and 1/5 of each: grilled veggies quinoa, tofu. Then 1 tbsp feta cheese per jar (optional) and fresh parsley for garnish.
  6. Store: Seal the jars and refrigerate. They stay fresh for 3-4 days.
