Quinoa & Grilled Veggie Salad Jars

Ingredients
- 1/2 cups quinoa, dried
- 1 package baked tofu
- 4 small zucchini, sliced into wedges
- 1 bell peppers, sliced
- 1/2 onion, sliced
- 1 tbsp olive oil
- salt, to taste
- pepper, to taste
- 1/4 cup feta, reduced-fat or fat-free
Dressing
- 3 tbsp tahini
- 3 tbsp balsamic vinegar
- 3 tbsp olive oil
- 3 tbsp water
Instructions
- Cook the half-cup if dry quinoa according to package instructions.
- Slice the zucchini, bell pepper, and onion. Toss with olive oil, salt, and pepper, then grill or air-fry until tender and slightly charred.
- Cube the pre-baked tofu into bite-sized pieces. Optionally, throw in on the grill or air fryer for a few minutes.
- Mix the dressing.
- Assemble the jars: In each pint-sized mason jar, layer: Dressing (1 tbsp) and 1/5 of each: grilled veggies quinoa, tofu. Then 1 tbsp feta cheese per jar (optional) and fresh parsley for garnish.
- Store: Seal the jars and refrigerate. They stay fresh for 3-4 days.
