Red Bean and Lentil Chili

Red Bean and Lentil Chili

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 15 oz kidney beans, can, drained and rinsed
  • 1/2 cup lentils, dried
  • 2 cups tomato, chopped
  • 2 cups vegetable broth
  • salt, to taste
  • pepper, to taste

Instructions

  1. Sauté onion and garlic in olive oil until softened.
  2. Add spices and stir.
  3. Add beans, lentils, tomatoes, and broth.
  4. Bring to a boil, then reduce to a simmer and cook for 25–30 minutes until lentils are tender.
  5. Adjust seasoning to taste.
