Salmon with Dill Yogurt Sauce and Roasted Cauliflower

Ingredients
For the Salmon
- 3 five oz salmon fillets
- 1 olive oil
- salt
- pepper
- lemon wedges, for serving
Dill Yogurt Sauce
- 1/2 cup Greek yogurt, nonfat
- 1 tbsp dill, fresh
- 1 tsp lemon juice
- 1/2 tsp lemon zest
- 1 tsp olive oil
- sprinkle salt
For the Roasted Cauliflower
- 1 head cauliflower, cut into florets
- 1 1/2 tbsp olive oil
- 1 tbsp capers
- 1/2 tsp garlic powder
- lemon zest, from 1/2 lemon
- salt
- pepper
- parsley, chopped, optional
- walnuts, chopped, optional
Instructions
- Preheat oven to 425°F (220°C). Line a sheet pan with parchment.
- Toss florets with olive oil, garlic powder, lemon zest, salt, pepper, and capers.
- Roast 25–30 min until browned and tender, tossing once halfway.
- Mix yogurt, dill, lemon juice, zest, olive oil, and a pinch of salt in a small bowl. Chill in fridge while everything cooks.
- Pat dry and season salmon with salt and pepper.
- Heat 1 tbsp olive oil in a skillet (preferably nonstick or cast iron) over medium heat.
- Place salmon skin-side down. Cook 5–6 min, flip, and cook 2–3 more min or until just cooked through.
- Plate the roasted cauliflower, top with parsley or walnuts if using.
- Serve salmon with a dollop of dill yogurt sauce and a lemon wedge on the side.
