Salmon with Dill Yogurt Sauce and Roasted Cauliflower

Salmon with Dill Yogurt Sauce and Roasted Cauliflower

Ingredients

For the Salmon

  • 3 five oz salmon fillets
  • 1 olive oil
  • salt
  • pepper
  • lemon wedges, for serving

Dill Yogurt Sauce

  • 1/2 cup Greek yogurt, nonfat
  • 1 tbsp dill, fresh
  • 1 tsp lemon juice
  • 1/2 tsp lemon zest
  • 1 tsp olive oil
  • sprinkle salt

For the Roasted Cauliflower

  • 1 head cauliflower, cut into florets
  • 1 1/2 tbsp olive oil
  • 1 tbsp capers
  • 1/2 tsp garlic powder
  • lemon zest, from 1/2 lemon
  • salt
  • pepper
  • parsley, chopped, optional
  • walnuts, chopped, optional

Instructions

  1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment.
  2. Toss florets with olive oil, garlic powder, lemon zest, salt, pepper, and capers.
  3. Roast 25–30 min until browned and tender, tossing once halfway.
  4. Mix yogurt, dill, lemon juice, zest, olive oil, and a pinch of salt in a small bowl. Chill in fridge while everything cooks.
  5. Pat dry and season salmon with salt and pepper.
  6. Heat 1 tbsp olive oil in a skillet (preferably nonstick or cast iron) over medium heat.
  7. Place salmon skin-side down. Cook 5–6 min, flip, and cook 2–3 more min or until just cooked through.
  8. Plate the roasted cauliflower, top with parsley or walnuts if using.
  9. Serve salmon with a dollop of dill yogurt sauce and a lemon wedge on the side.
