Savory Grilled Chicken
This savory grilled chicken is simple enough for a weeknight yet flavorful enough to impress. Marinated in a blend of olive oil, herbs, and spices, it stays juicy on the inside with a perfectly grilled exterior—an easy, MIND diet–friendly protein you’ll want on repeat.
Ingredients
- 4 chicken, boneless skinless breasts
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp thyme, fresh
- 1 tbsp dried rosemary
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp honey
- lemon juice, from 1/2 lemon
Instructions
- In a bowl, combine the olive oil, garlic, lemon juice, Dijon mustard, thyme, rosemary, smoked paprika, cumin, salt, pepper, and honey (if using). Whisk well to combine and make a smooth marinade.
- Place the chicken breasts (or thighs) in a shallow dish or resealable bag and pour the marinade over the chicken.
- Massage the marinade into the chicken, ensuring it’s well-coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).
- Preheat your grill to medium-high heat.
- Grill the chicken for 5-7 minutes per side, and until it reaches an internal temperature of 165°F (75°C) and is nicely charred on the outside.
- Let the chicken rest for 5-10 minutes before serving to allow the juices to redistribute.
- Squeeze fresh lemon juice over the grilled chicken for an extra burst of zesty flavor.
