Savory Grilled Chicken



This savory grilled chicken is simple enough for a weeknight yet flavorful enough to impress. Marinated in a blend of olive oil, herbs, and spices, it stays juicy on the inside with a perfectly grilled exterior—an easy, MIND diet–friendly protein you’ll want on repeat.

Ingredients

  • 4 chicken, boneless skinless breasts
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp thyme, fresh
  • 1 tbsp dried rosemary
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp honey
  • lemon juice, from 1/2 lemon

Instructions

  1. In a bowl, combine the olive oil, garlic, lemon juice, Dijon mustard, thyme, rosemary, smoked paprika, cumin, salt, pepper, and honey (if using). Whisk well to combine and make a smooth marinade.
  2. Place the chicken breasts (or thighs) in a shallow dish or resealable bag and pour the marinade over the chicken.
  3. Massage the marinade into the chicken, ensuring it’s well-coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).
  4. Preheat your grill to medium-high heat.
  5. Grill the chicken for 5-7 minutes per side, and until it reaches an internal temperature of 165°F (75°C) and is nicely charred on the outside.
  6. Let the chicken rest for 5-10 minutes before serving to allow the juices to redistribute.
  7. Squeeze fresh lemon juice over the grilled chicken for an extra burst of zesty flavor.
