Ingredients

  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 cup mushrooms, sliced
  • 1/2 cup bell peppers, chopped
  • 2 cups kale, destemmed and chopped
  • 1 cup cooked lentils
  • 1 tbsp pumpkin seeds
  • 2 eggs

Instructions

  1. Heat olive oil in a skillet or Dutch oven over medium heat and sauté garlic for 30 seconds.
  2. Add mushrooms and peppers and cook until browned and tender (6–8 minutes).
  3. Add greens and cook until wilted. Cover the pan if needed until the greens become tender.
  4. Stir in lentils, cooking until heated through.
  5. Make wells in the greens-lentil mixture and crack an egg in each well.
  6. Cover and cook 5-7 minutes.
  7. Sprinkle with pumpkin seeds. Serve warm.
