Ingredients
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 cup mushrooms, sliced
- 1/2 cup bell peppers, chopped
- 2 cups kale, destemmed and chopped
- 1 cup cooked lentils
- 1 tbsp pumpkin seeds
- 2 eggs
Instructions
- Heat olive oil in a skillet or Dutch oven over medium heat and sauté garlic for 30 seconds.
- Add mushrooms and peppers and cook until browned and tender (6–8 minutes).
- Add greens and cook until wilted. Cover the pan if needed until the greens become tender.
- Stir in lentils, cooking until heated through.
- Make wells in the greens-lentil mixture and crack an egg in each well.
- Cover and cook 5-7 minutes.
- Sprinkle with pumpkin seeds. Serve warm.
