Spinach-Edamame Salad with Hard Boiled Egg

Ingredients

  • 1 1/2 cups spinach
  • 1 hard boiled egg, sliced
  • 1/2 cup edamame
  • 2 tbsp walnuts, chopped
  • 1 tsp lemon juice
  • 1 tsp red wine vinegar
  • salt, to taste
  • 1 tsp olive oil
  • pepper, to taste

Instructions

  1. Toss spinach with olive oil, red wine vinegar and lemon juice.
  2. Add edamame, hard-boiled egg slices, and walnuts.
  3. Season lightly with salt and pepper.
