With lightly toasted coconut chips, crunchy walnuts, omega‑3‑rich flaxseed, and just a kiss of olive oil and maple syrup, each spoonful offers brain-loving benefits without feeling heavy. Summer Sunshine Granola (MIND Diet–Friendly)

Ingredients

  • 2 cups rolled oats
  • 1/2 cup coconut chips
  • 1/3 cup walnuts
  • 2 tbsp ground flaxseed
  • 1/3 cup sunflower seeds
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • orange zest, from one orange
  • 1 1/2 tbsp olive oil
  • 1 1/2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 10 Medjool dates, chopped

Instructions

  1. Preheat oven to 325°F (163°C). Line a baking sheet with parchment.
  2. In a large bowl, mix: oats, nuts, flaxseed, chia, cinnamon, salt, and citrus zest.
  3. In a small bowl, whisk: olive oil, maple syrup, and vanilla.
  4. Pour wet over dry and stir until evenly coated.
  5. Spread granola onto prepared pan in an even layer.
  6. Bake 20 minutes, stir gently, then bake another 10–15 minutes until golden brown. Keep an eye so it doesn’t burn.
  7. In the last 5 minutes, sprinkle on coconut chips (they toast quickly!).
  8. Cool completely, then stir in dried fruit.
