Summer Sunshine Granola (MIND Diet–Friendly)
As the sun warms the mornings, this Summer Sunshine Granola brings a burst of tropical flavor and wholesome nutrition to your table. With lightly toasted coconut chips, crunchy walnuts, omega‑3‑rich flaxseed, and just a kiss of olive oil and maple syrup, each spoonful offers brain-loving benefits without feeling heavy. It’s the perfect balance of sweet, tangy, and toasty flavors—ideal over yogurt, smoothie bowls, or simply by the handful.
Ingredients
- 2 cups rolled oats
- 1/2 cup coconut chips
- 1/3 cup walnuts
- 2 tbsp ground flaxseed
- 1/3 cup sunflower seeds
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- orange zest, from one orange
- 1 1/2 tbsp olive oil
- 1 1/2 tbsp maple syrup
- 1 tsp vanilla extract
- 10 Medjool dates, chopped
Instructions
- Preheat oven to 325°F (163°C). Line a baking sheet with parchment.
- In a large bowl, mix: oats, nuts, flaxseed, chia, cinnamon, salt, and citrus zest.
- In a small bowl, whisk: olive oil, maple syrup, and vanilla.
- Pour wet over dry and stir until evenly coated.
- Spread granola onto prepared pan in an even layer.
- Bake 20 minutes, stir gently, then bake another 10–15 minutes until golden brown. Keep an eye so it doesn’t burn.
- In the last 5 minutes, sprinkle on coconut chips (they toast quickly!).
- Cool completely, then stir in dried fruit.
