Swiss Chard & White Bean Ragout over Herbed Polenta
This cozy, nutrient-packed dish pairs creamy herbed olive oil polenta with a hearty ragout of Swiss chard and white beans. Ingredients
Herbed Olive Oil Polenta
- 3 cups vegetable broth
- pepper
- 1 tbsp olive oil
- 1 tsp thyme, fresh, destemmed
- 3/4 cup polenta, dry
- salt
Swiss Chard & White Bean Ragout
- 1 tbsp olive oil
- 1/2 red onion, finely chopped
- 2 cloves garlic, minced
- 1 bunch swiss chard, chopped, stems and leaves separated
- 1 1/2 cups cooked white beans
- 1/2 cup vegetable broth
- 1 tsp thyme, fresh, destemmed
- salt, to taste
- pepper, to taste
- red pepper flakes, to taste
Instructions
- Bring broth to a simmer. Whisk in polenta slowly.
- Stir frequently over low heat for 15–20 minutes until soft.
- Stir in olive oil and herbs. Keep warm.
- Meanwhile, sauté red onions + chard stems in olive oil for 3–4 minutes.
- Add garlic, cook 30 seconds. Add chard leaves, stir until wilted.
- Stir in white beans, broth, thyme, salt/pepper. Simmer 5–8 minutes until saucy.
