Swiss Chard & White Bean Ragout over Herbed Polenta

Swiss Chard & White Bean Ragout over Herbed Polenta

Ingredients

Herbed Olive Oil Polenta

  • 3 cups vegetable broth
  • pepper
  • 1 tbsp olive oil
  • 1 tsp thyme, fresh, destemmed
  • 3/4 cup polenta, dry
  • salt

Swiss Chard & White Bean Ragout

  • 1 tbsp olive oil
  • 1/2 red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bunch swiss chard, chopped, stems and leaves separated
  • 1 1/2 cups cooked white beans
  • 1/2 cup vegetable broth
  • 1 tsp thyme, fresh, destemmed
  • salt, to taste
  • pepper, to taste
  • red pepper flakes, to taste

Instructions

  1. Bring broth to a simmer. Whisk in polenta slowly.
  2. Stir frequently over low heat for 15–20 minutes until soft.
  3. Stir in olive oil and herbs. Keep warm.
  4. Meanwhile, sauté red onions + chard stems in olive oil for 3–4 minutes.
  5. Add garlic, cook 30 seconds. Add chard leaves, stir until wilted.
  6. Stir in white beans, broth, thyme, salt/pepper. Simmer 5–8 minutes until saucy.
