Tomato, Corn & Black Bean Salad

Tomato, Corn & Black Bean Salad

Ingredients

  • 2 cups corn
  • 1 1/2 cups cooked black beans
  • 2 cups tomato, chopped
  • 1/2 cup red onion, finely diced
  • 1/4 cup cilantro, chopped
  • 2 limes lime juice
  • 2 tbsp olive oil
  • salt
  • pepper

Instructions

  1. If using fresh corn: Cut kernels from the cob. For extra flavor, char in a skillet or grill pan 2–3 minutes. If using frozen: Thaw and pat dry.
  2. Mix salad: In a large bowl, combine corn, black beans, tomatoes, red onion, and cilantro.
  3. Dress it up: Whisk together lime juice, olive oil, salt, and pepper. Pour over salad and toss gently.
  4. Serve: Chill for 15–30 minutes if time allows. Add avocado and/or feta just before serving.
