Tomato, Corn & Black Bean Salad
Fresh, colorful, and bursting with summer flavor, this MIND diet–friendly tomato, corn, and black bean salad is the kind of side dish that quickly becomes a staple. Sweet corn, juicy tomatoes, and hearty black beans are tossed with lime and cilantro for a bright, zesty mix that pairs well with everything from grilled fish to pulled BBQ chicken. Packed with fiber, plant-based protein, and antioxidants, it’s a salad that tastes as good as it makes you feel.
Ingredients
- 2 cups corn
- 1 1/2 cups cooked black beans
- 2 cups tomato, chopped
- 1/2 cup red onion, finely diced
- 1/4 cup cilantro, chopped
- 2 limes lime juice
- 2 tbsp olive oil
- salt
- pepper
Instructions
- If using fresh corn: Cut kernels from the cob. For extra flavor, char in a skillet or grill pan 2–3 minutes. If using frozen: Thaw and pat dry.
- Mix salad: In a large bowl, combine corn, black beans, tomatoes, red onion, and cilantro.
- Dress it up: Whisk together lime juice, olive oil, salt, and pepper. Pour over salad and toss gently.
- Serve: Chill for 15–30 minutes if time allows. Add avocado and/or feta just before serving.
