Turkey, Black Bean and Spinach Tacos
These turkey, black bean, and spinach tacos are a simple, flavorful weeknight meal that comes together quickly in one pan. They’re hearty and satisfying, with plenty of texture and just enough spice—easy to customize with your favorite toppings.

Ingredients
- 1 tbsp olive oil
- 1 lb ground turkey
- 1/2 cup onion, finely chopped
- 3 tbsp tomato paste
- 3 tsp chili powder
- 1 1/2 tsp ground cumin
- 1/2 tsp garlic powder
- 3/4 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp cayenne
- 1/4 cup water
- 1 can cooked black beans, drained and rinsed
- 2 cups spinach, chopped
- 1 lime, juiced
For serving
- 8 corn tortillas
- 2 cups romaine lettuce, shredded
- 1 cup tomato, chopped
- 1 avocado, sliced or diced
- 2 tbsp cilantro, chopped
- 1 lime, cut into wedges
- 1/4 cup Greek yogurt, nonfat
- 1/2 cup salsa
- 1/2 cup low fat cheddar
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and cook 3–4 minutes, until softened.
- Add the ground turkey and cook, breaking it up, until browned and cooked through.
- Stir in the tomato paste, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper. Cook for 2–3 minutes, stirring, until slightly darkened and fragrant.
- Add the water and stir well to combine.
- Add the black beans and cook for 2–3 minutes, stirring gently, until heated through and lightly saucy.
- Stir in the spinach and cook for 1–2 minutes, until wilted. Add the lime juice and stir to combine.
- Spoon into warm tortillas and top with lettuce, tomatoes, avocado, cilantro, and a squeeze of lime.
