Turkey, Black Bean and Spinach Tacos



These turkey, black bean, and spinach tacos are a simple, flavorful weeknight meal that comes together quickly in one pan. They’re hearty and satisfying, with plenty of texture and just enough spice—easy to customize with your favorite toppings.

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1/2 cup onion, finely chopped
  • 3 tbsp tomato paste
  • 3 tsp chili powder
  • 1 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 3/4 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp cayenne
  • 1/4 cup water
  • 1 can cooked black beans, drained and rinsed
  • 2 cups spinach, chopped
  • 1 lime, juiced

For serving

  • 8 corn tortillas
  • 2 cups romaine lettuce, shredded
  • 1 cup tomato, chopped
  • 1 avocado, sliced or diced
  • 2 tbsp cilantro, chopped
  • 1 lime, cut into wedges
  • 1/4 cup Greek yogurt, nonfat
  • 1/2 cup salsa
  • 1/2 cup low fat cheddar

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and cook 3–4 minutes, until softened.
  3. Add the ground turkey and cook, breaking it up, until browned and cooked through.
  4. Stir in the tomato paste, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper. Cook for 2–3 minutes, stirring, until slightly darkened and fragrant.
  5. Add the water and stir well to combine.
  6. Add the black beans and cook for 2–3 minutes, stirring gently, until heated through and lightly saucy.
  7. Stir in the spinach and cook for 1–2 minutes, until wilted. Add the lime juice and stir to combine.
  8. Spoon into warm tortillas and top with lettuce, tomatoes, avocado, cilantro, and a squeeze of lime.
