Turkey Smash Tacos



These Turkey Smash Tacos are a quick, high-protein, MIND Diet–friendly dinner with a bright cumin-lime slaw. Ready in 40 minutes and family-approved.

Ingredients

Slaw

  • 1/4 cup olive oil
  • 1/2 lime, juiced
  • 1/4 tsp ground cumin
  • pinch salt
  • 2 1/2 cup cabbage, shredded
  • 2 1/2 cup kale, finely chopped

Smash Tacos

  • 1 tsp olive oil
  • 1 lb ground turkey
  • 2 tbsp taco seasoning
  • 6 medium tortillas, whole grain

Instructions

  1. Whisk together the olive oil, lime juice, cumin and a pinch of salt. Then in a medium bowl, mix the dressing with the cabbage and kale.
  2. In a separate bowl, mix together: ground turkey and taco seasoning.
  3. Heat a griddle or skillet. Brush with oil.
  4. Spread ground turkey mixture on a tortilla, trying to get the filling all of the way to the edges.
  5. Cook meat-side down on the griddle for 2-3 minutes until the meat side is brown.
  6. Flip and cook another minute. Repeat with each tortilla.
  7. Fill each taco with a generous scoop of the slaw.
