Ingredients
- 3 cups brown rice, cooked
- 8 oz baked tofu, cubed
- 3 cups spinach, thinly sliced
- 2 cups cabbage, shredded
- 1/2 small onion, very thinly sliced
- 1/4 cups walnuts, chopped
For the Creamy Avocado Dressing
- 1 ripe avocado
- 1 tbsp tahini
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp tamari
- 1/4 tsp garlic powder
- 1 cup basil, fresh
- pinch salt
- pinch pepper
- 2 tbsp water
Instructions
- Cook the brown rice according to the package directions.
- When it is done, mix in the tofu cubes.
- Thinly slice the spinach, cabbage, and onion and toss together in a large serving bowl.
- Blend avocado, tahini, lemon juice, olive oil, tamari, garlic powder, basil, salt & pepper until smooth.
- Add water as needed to reach your preferred consistency.
- Add rice tofu mixture to each bowl, then the greens.
- Drizzle the avocado dressing over the greens & tofu.
- Sprinkle with walnuts for crunch.
- Serve immediately & enjoy!
