Vibrant Basil & Avocado Tofu Bowl (MIND Diet-Friendly)

Ingredients

  • 3 cups brown rice, cooked
  • 8 oz baked tofu, cubed
  • 3 cups spinach, thinly sliced
  • 2 cups cabbage, shredded
  • 1/2 small onion, very thinly sliced
  • 1/4 cups walnuts, chopped

For the Creamy Avocado Dressing

  • 1 ripe avocado
  • 1 tbsp tahini
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp tamari
  • 1/4 tsp garlic powder
  • 1 cup basil, fresh
  • pinch salt
  • pinch pepper
  • 2 tbsp water

Instructions

  1. Cook the brown rice according to the package directions.
  2. When it is done, mix in the tofu cubes.
  3. Thinly slice the spinach, cabbage, and onion and toss together in a large serving bowl.
  4. Blend avocado, tahini, lemon juice, olive oil, tamari, garlic powder, basil, salt & pepper until smooth.
  5. Add water as needed to reach your preferred consistency.
  6. Add rice tofu mixture to each bowl, then the greens.
  7. Drizzle the avocado dressing over the greens & tofu.
  8. Sprinkle with walnuts for crunch.
  9. Serve immediately & enjoy!
