Warm Cinnamon Apple & Yogurt Overnight Oats

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup soy milk
  • 1/4 cup Greek yogurt, nonfat
  • 1 tsp chia seeds
  • 1/2 tsp ground cinnamon
  • 1/2 tsp maple syrup
  • 1 pinch salt

Cinnamon Apples

  • 1 apple, cored and diced
  • 1/2 tsp peanut butter, natural
  • 1/2 tsp ground cinnamon
  • 1/2 tsp maple syrup
  • 1 pinch salt
  • 4 tbsp water

Toppings

  • 1/4 cup Greek yogurt, nonfat
  • 1 pinch ground cinnamon

Topping

  • 1 tbsp walnuts

Instructions

  1. The night before (or earlier), combine oats, milk, yogurt, chia seeds, cinnamon, maple syrup, and salt in a jar or lidded container. Stir well, cover, and refrigerate overnight (or at least 4 hours).​
  2. Also the night before (or earlier), in a small skillet over medium heat, add peanut hutter and water. Stir in diced apples, cinnamon, maple syrup, and a pinch of salt. Cook 5–7 minutes, stirring occasionally, until apples are tender and lightly golden.
  3. In 2 cup containers (e.g. Pyrex), fill each halfway with the oats mixture. Then spoon sautéed apples over the oat mixture (don’t stir). Cover and refrigerate overnight.
  4. In the morning, reheat oats gently in the microwave (about 45–60 seconds).
  5. Add a cold scoop of yogurt. Sprinkle nuts and seeds on top.
