Warm Cinnamon Apple & Yogurt Overnight Oats
These Apple Cinnamon Yogurt Overnight Oats taste like a cozy fall morning in a bowl — creamy, lightly spiced, and naturally sweetened with apples. Greek yogurt adds protein and richness while oats and walnuts deliver brain-boosting fiber and healthy fats. Perfect for busy mornings, they’re an easy make-ahead breakfast that keeps you full and energized all day.
Ingredients
- 1/2 cup rolled oats
- 1/2 cup soy milk
- 1/4 cup Greek yogurt, nonfat
- 1 tsp chia seeds
- 1/2 tsp ground cinnamon
- 1/2 tsp maple syrup
- 1 pinch salt
Cinnamon Apples
- 1 apple, cored and diced
- 1/2 tsp peanut butter, natural
- 1/2 tsp ground cinnamon
- 1/2 tsp maple syrup
- 1 pinch salt
- 4 tbsp water
Toppings
- 1/4 cup Greek yogurt, nonfat
- 1 pinch ground cinnamon
Topping
- 1 tbsp walnuts
Instructions
- The night before (or earlier), combine oats, milk, yogurt, chia seeds, cinnamon, maple syrup, and salt in a jar or lidded container. Stir well, cover, and refrigerate overnight (or at least 4 hours).
- Also the night before (or earlier), in a small skillet over medium heat, add peanut hutter and water. Stir in diced apples, cinnamon, maple syrup, and a pinch of salt. Cook 5–7 minutes, stirring occasionally, until apples are tender and lightly golden.
- In 2 cup containers (e.g. Pyrex), fill each halfway with the oats mixture. Then spoon sautéed apples over the oat mixture (don’t stir). Cover and refrigerate overnight.
- In the morning, reheat oats gently in the microwave (about 45–60 seconds).
- Add a cold scoop of yogurt. Sprinkle nuts and seeds on top.
