Zesty White Bean Herb Salad
This vibrant white bean herb salad bursts with Mediterranean flavor, thanks to crisp vegetables, olives, creamy nonfat feta, and a zesty lemon-tahini dressing. It's quick to make, packed with fiber and protein and perfect as a light lunch, picnic dish - especially with warm pita.
Ingredients
- 1 1/2 cups cooked white beans
- 1 cucumber, diced
- 1 bell peppers, diced
- 2 small tomato, chopped
- 1/2 red onion, finely chopped
- 1/2 cup olives
- 1/4 cup feta, reduced-fat or fat-free
- 1 tbsp olive oil
- 2 lemons lemon juice, from 2 lemon
- 1 tbsp tahini
- 1 tbsp apple cider vinegar
- 1/2 tsp dried oregano
- salt, to taste
- pepper, to taste
- parsley
- 1 lemon lemon zest
Instructions
- Prepare the salad: In a large bowl, combine the white beans, cucumber, bell pepper, red onion, olives, and feta (if using). Stir to combine.
- Make the dressing: In a small bowl, whisk together the olive oil, lemon juice (2 lemons), lemon zest, tahini, cider vinegar, oregano, salt, and pepper until smooth and creamy.
- Toss the salad: Pour the dressing over the salad and toss gently to combine. Make sure everything is well-coated.
- Serve: Garnish with fresh parsley or cilantro, and enjoy! Serve it as a refreshing meal on its own or with a side of homemade flatbread or pita.
