Ingredients
- 1 lb chicken tenders, raw (not breaded)
- 1/4 cup almond flour
- 1/4 cup whole wheat panko breadcrumbs
- 2 tbsp ground flaxseed
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 cup Greek yogurt, nonfat
Instructions
- Preheat oven to 425°F. Line a baking sheet with parchment paper and set a wire rack on top if you have one.
- In a shallow bowl, mix breadcrumbs, flour, flaxseed and spices.
- In another bowl, toss chicken tenders with Greek yogurt to coat evenly.
- Dredge each tender in the breadcrumb mixture, pressing to coat.
- Place tenders on the prepared baking rack or parchment.
- Bake 16–20 minutes, flipping halfway, until golden and cooked through (165°F internal temp).
- Optional: Broil the last 1–2 minutes for extra crispness.
