Garlicky Collard Greens

Ingredients
- 1 tbsp olive oil
- 1 small onion, chopped
- 1 bunch collard greens
- 2 cloves garlic, minced
- 1/2 cup vegetable broth
- 2 tsp apple cider vinegar
- salt
- pepper
Instructions
- Heat olive oil in a skillet. Sauté onion for 3–4 minutes until translucent.
- Add garlic and stir for 30 seconds.
- Add collards and water/broth. Cover and simmer for 10–15 minutes until tender.
- Stir in vinegar, season with salt, pepper, and Optionally red pepper flakes. Serve warm.
