Cajun-Inspired Beans

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 small jalapeno, diced
  • 1 stalk celery, diced
  • 3 cloves garlic, diced
  • 1 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 bay leaf
  • 1/4 tsp cayenne
  • 3 cups cooked pinto beans
  • 1 1/2 cup vegetable broth
  • 1 tsp tamari
  • 1 tsp apple cider vinegar
  • salt
  • pepper
  • 1/2 tsp liquid smoke, natural, optional

Instructions

  1. Heat olive oil in a pot over medium heat. Add onion, bell pepper, and celery. Cook 8–10 minutes until softened.
  2. Add garlic, paprika, thyme, oregano, cayenne, and bay leaf. Stir for 1 minute until fragrant.
  3. Add beans, broth, and soy sauce. Bring to a simmer and cook uncovered for 20–25 minutes.
  4. Mash a few spoonfuls of beans against the pot wall to create creaminess.
  5. Stir in vinegar or hot sauce. Adjust salt, pepper, and thickness as needed. Remove bay leaf before serving.
