Potatoes O'Brien

Potatoes O'Brien

Ingredients

  • 1 lb potatoes, diced small (1/2 inch)
  • 1 small summer squash
  • 1 onion
  • 1 bell peppers, red, diced
  • 1 bell peppers, diced
  • 3 Tbsp olive oil, divided
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • salt
  • pepper

Instructions

  1. Preheat the oven to 425 F. Line a large sheet pan with parchment for easy cleanup.
  2. Toss potatoes, squash, bell peppers and onion with 2 Tbsp olive oil, smoked paprika, garlic powder, salt and pepper.
  3. Spread in an even layer. Roast 30 minutes, stirring halfway through.
