Ingredients
- 1 lb potatoes, diced small (1/2 inch)
- 1 small summer squash
- 1 onion
- 1 bell peppers, red, diced
- 1 bell peppers, diced
- 3 Tbsp olive oil, divided
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- salt
- pepper
Instructions
- Preheat the oven to 425 F. Line a large sheet pan with parchment for easy cleanup.
- Toss potatoes, squash, bell peppers and onion with 2 Tbsp olive oil, smoked paprika, garlic powder, salt and pepper.
- Spread in an even layer. Roast 30 minutes, stirring halfway through.
