Spanish Tomato & Tuna Salad
This vibrant Spanish Tomato & Tuna Salad brings together juicy tomato wedges, briny capers or olives, sweet-sharp red onion, and wild-caught tuna in a light olive oil and red wine vinegar dressing. Inspired by the MIND diet, it’s a brain-healthy, nutrient-rich salad that’s simple to throw together yet full of flavor and satisfying textures.
Ingredients
- 4 large tomato, cut into wedges
- 1 medium red onion, thinly sliced
- 2 cans wild-caught tuna, drained
- 3 tbsp olive oil
- 1 1/2 tbsp red wine vinegar
- 1 1/2 tbsp capers, or 12 sliced olives
- parsley, chopped
- salt
- pepper
Instructions
- Spread wedges on a platter, sprinkle lightly with salt, let sit 5 minutes.
- Toss sliced onion with vinegar and a pinch of salt.
- Mix tuna with olive oil, capers, olives and herbs.
- Scatter onion over tomatoes. Add leafy greens in the center and spoon tuna over the greens.
- Season with pepper.
