Whole Grain Olive Oil Tortillas

Ingredients
- 3/4 cups whole wheat flour
- 3/4 cups unbleached white flour
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1 tsp ground flaxseed
- 2 tbsp olive oil
- 1/2 cup water, hot (but not boiling)
Instructions
- In the food processor bowl with the dough blade, pulse together: whole wheat flour, white flour, baking powder and salt.
- With the machine running, drizzle in the olive oil and let it pulse a few times until it looks like coarse crumbs.
- Slowly pour in warm water through the feed tube. Pulse about 7 times.
- Turn out the dough. Knead by hand for about 1 minute.
- Let rest under a damp towel for 30 minutes.
- Then, divide into 8 balls.
- Roll each ball into a thin 8" circle on a lightly floured surface. Roll as thin as you possibly can.
- Cook on a dry, hot skillet or griddle over medium heat for about 30 seconds per side, or until lightly browned and bubbling.
