Whole Grain Olive Oil Tortillas

Whole Grain Olive Oil Tortillas

Servings: 8

Ingredients

  • 3/4 cups whole wheat flour
  • 3/4 cups unbleached white flour
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1 tsp ground flaxseed
  • 2 tbsp olive oil
  • 1/2 cup water, hot (but not boiling)

Instructions

  1. In the food processor bowl with the dough blade, pulse together: whole wheat flour, white flour, baking powder and salt.
  2. With the machine running, drizzle in the olive oil and let it pulse a few times until it looks like coarse crumbs.
  3. Slowly pour in warm water through the feed tube. Pulse about 7 times.
  4. Turn out the dough. Knead by hand for about 1 minute.
  5. Let rest under a damp towel for 30 minutes.
  6. Then, divide into 8 balls.
  7. Roll each ball into a thin 8" circle on a lightly floured surface. Roll as thin as you possibly can.
  8. Cook on a dry, hot skillet or griddle over medium heat for about 30 seconds per side, or until lightly browned and bubbling.
