Salmon Burgers
These Salmon Burgers are a warm-weather win—hearty enough to satisfy, yet light and refreshing, and best of all, they won’t heat up your kitchen much. Made with canned or pouched salmon for convenience, the burgers are held together beautifully with oat flour, egg, and flaxseed, then cooked to perfection. It’s a simple, nutritious meal you can feel great about serving any night of the week.
Ingredients
- 2 cans wild-caught salmon, drained (or 3 packets)
- 1 eggs
- 1/4 cup oat flour
- 1/4 cup ground flaxseed
- 1 tbsp Dijon mustard
- 2 tbsp onion, finely chopped
- 1 tbsp dill, chopped
- lemon zest, from 1/2 lemon
- salt
- pepper
- 1 tbsp olive oil
- whole wheat buns
Instructions
- In a medium bowl, mash the drained salmon with a fork.
- Add egg, oat flour, ground flaxseed, mustard, onion, lemon zest, herbs, and seasoning. Add up to 1/4 cup more oat flour if needed, until the patties stick together and aren't too wet.
- Mix well and form into 4 patties.
- Pan-sear: Heat olive oil in a skillet, then cook patties 3–4 minutes per side, until golden and crisp.
